Photosounder is a tasty looking tool (currently Windows only) for turning sound into images (and vice versa) that can then be used for instrument extraction, resynthesis or other processing. While the concept of using graphics to represent and edit sound is hardly new (the closest example I can think of is Metasynth) this seems to be a pretty cool implementation, particularly when used with a powerful graphics editor like Photoshop.
